We import this iron-rich rice from small estates in the fertile Mesopotamian river valleys of central Argentina at the foothills of the Andes Mountains. Transplanted to Argentina by Italians in the early 1900s, Carnaroli speaks a dialect of its own. Its exquisite flavor and perfect texture is enhanced by the region's humidity, heavy rainfall and rich river-fed soils.
