Basic Congee ("Jook")
Place rice in 4-quart pot. Wash the rice if desired. Drain. Return the rice to the pot, then add the water and stock and bring to a boil over high heat. Cover the pot, leaving the lid partially open. Reduce the heat to medium-low and cook for 1 hour, stirring occasionally to prevent the rice from sticking to the bottom of the pot. Cook until the rice thickens to the desired consistency of porridge. Serves 6 |
