Cook rice in salted water according to directions on package. Set aside and keep warm.

Heat oil over medium-high heat in a large skillet or wok. Add pork and cook until browned and cooked through, breaking it up with a wooden spoon as it cooks. Season with salt and pepper to taste.

Add onion, garlic, and ginger to the skillet and cook until onion is softened and translucent (~3-4 mins).

Add carrot, cabbage, snow peas, rice vinegar, soy sauce, and hoisin sauce to the skillet. Cook until cabbage has wilted, and the vegetables are tender and coated with the sauce (~3-4 mins).

Taste and season with soy sauce, salt and pepper as needed.

To serve, divide rice among serving bowls and top with the egg roll mixture. Garnish with chopped green onions.
